About Program
The first 2-week intensive academic classes introduce students to sustainability and food by exploring how agriculture and food production affect not only on the environment but also on society. In our program we analyze the whole food supply chain: from cultivation methods (conventional, permaculture, bio-dynamic,organic) to food production (manufacturing, distribution, trade, waste, life cycle assessment) in order to provide the theoretical tools to understand and take part in current debates in the field of sustainability.
This will prepare students to their 3-week internship in a local farm. Tuscany is a perfect place to study agricultural practices; on the one hand, Tuscan farmers continue historical farming traditions and, on the other, lead the way to innovative approaches to sustainable living.
