I'd suggest taking the minimum you need, unless something really sticks out at you. The classes are really there just to help along your language skills, if you're somewhere that doesn't speak english, and to maintain your academic standing. Even most of your professors won't give a ton of work outside of class, because they want you to go out and experience the culture.

When I studied abroad in Australia I took four classes, one fewer than my normal course load at the University of Maryland. This allowed me to get a good feel for academic life in Australia and of course advance in my studies while at the same time have a bit more time to explore my new adoptive country.
